Oblivion Cellars Paso Robles Cabernet Sauvignon 2019
APPELLATION: Paso Robles, California
WINEMAKING: High quality fruit was sourced from the Paso Robles AVA including selected blocks from Sextant Vineyards, Still Waters, Anderson and Daou Vineyards. The balance of the fruit (5%) came from Chalk Knoll Vineyards located in the San Lucas AVA, Monterey County. The backbone of this Cabernet blend is made up of small lot fermented Cabernet Sauvignon grapes that were punched down three times a day to extract its rich color, flavor & tannin. Petite Sirah was added for additional body and depth while the Mourvedre addition gives the wine a nice aromatic touch, creating a classic Bordeaux style blend with new world flair. Aged 17 months in 20% New French Oak.
TASTING NOTES: Dark garnet in the glass, this Cabernet Sauvignon displays aromas of vanilla, dark fruit flavors of blackberry and chocolate with hints of tar and tobacco notes. On the palate this wine has a lush, silky texture with hints of cherry and currant fruit, sage, and roasted fig. Green bell peppers and black truffle notes combine with a full variety of exotic spices to allure the senses.
