This Sauternes displays a beautiful amber-colored hue and a nose of expressive exotic Fruits and honey. The palate unveils jammy fruit and fresh citrus flavors, which add a touch of lightness to the rich layers. Complex and showing excellent depth and a very long finish.
Right in the heart of Sauternes, Château Romer du Hayot has selected different batches from 40+ year old plots in order to produce “R de Romer du Hayot”. Grown on ideal limestone and gravel soils, all of the grapes for this classic Sauternes are hand harvested and sorted several times. The estate deeply respect the traditions that have contributed to these renown wines, but they also use the most modern winemaking and barrel ageing (6-8 months) techniques to further enhance the R de Romer du Hayot. This pretty Sauternes shows an unrivaled bouquet with great length and complexity. Best. From 2020-2050
A nicely balanced, rich expression of the vintage that has a pulse, with very clear ginger and lime zest. There is a verticality to this wine, which is really unusual in the vintage. It could go further, but well played. Drinking Window 2022 - 2050.
The 2016 Romer du Hayot has a pale lemon color and delivers pronounced earthy/savory notes of fungi, fallen leaves, fried spices, fresh hay and cedar over a core of lemon meringue pie, lime cordial and pineapple. Full, rich and seductive in the mouth, the bold citrus and tropical fruit layers are supported by fantastic freshness, and the finish is long and layered.
The mashed-banana aroma, alongside some candied pineapple, certainly makes this different, but on the palate the richness and bright acidity are still not fully married. Best at the quite long finish, where the caramel and citrusy acidity do fit. Better from 2020.
